Organic, fair trade ingredients are good!

1 1/2 Cup White Flour
1/3 C Unsweetened cocoa powder
1 Teaspoon Baking Soda
1/2 teaspoon Salt
1 C sugar
1/2 C vegetable oil
1C cold water or brewed coffee
2 tsp vanilla extract
2 tablespoons Vinegar

Preheat oven to 180C or 375F
Sift together flour, cocoa, baking soda, salt, sugar into an ungreased 8 inch square baking pan. In a 2cup measuring cup, measure and mix together the oil, water/coffee, and vanilla. Pour liquid ingredients into the baking pan and mix the batter with a fork. When smooth, add the vinegar and stir quickly. There will be pale swirls in the batter where vinegar and baking soda are reacting (fun!)
Stir just until the vinegar is evenly distributed.
Bake for 25 - 30 minutes.
Set aside to cool if you wish to ice it.
(My suggestion is eat it hot from the oven - excellent!)
